An easy drinking sparkling wine cocktail with a mellow citrusy flavor, a tried and true classic.
The Aperol Spritz has slowly worked its's way to becoming somewhat of a summertime classic in the cocktail world. It became popular in the 1950's and is marketed today as the pride and joy of Aperol.
It is simple, refreshing and easy to make.
What is Aperol?
Aperol is an Italian aperitif that is light, citrusy, and mildly bitter. It was first made in 1919, with a secret recipe (of course) and has gained mainstream popularity as the star of the show in the Aperol Spritz.
Compared to other aperitifs and "red bitters" it is quite sweet and mild only coming in at 11% alcohol by volume, but there's a time and place for that.
What does Aperol Taste Like?
Aperol tastes like a mild orange candy that you can smell as soon as you start to sip it. The taste is similar with a subtle background of herbs and woody flavors.
How to Make an Aperol Spritz
- Fill a wine glass with ice
- Measure in Aperol
- Top with sparkling wine and soda
- Garnish with an orange wedge
It's interesting to note that on the US version of the Aperol website the recipe suggests using equal parts Prosecco and Aperol, but this Youtube video with the cool cocktail contraption shows a 3:2:1 ratio like the recipe I've included below.
Choose a good quality sparkling wine
Picking a nice sparkling wine is a key for making any drink that calls for the bubbly stuff.
If the majority of your drink is made with it you want something decent.
No need to buy a $50 bottle of Champagne, but I would suggest finding something in the $12-15 range. That way it's delicious straight too.
It does not need to be Prosecco either.
There are lots of really good sparkling wines from all over the world but what matters most is that it is dry.
Look for bottles labeled "Brut", don't totally cheap out and you should be good to go.
If you're really lost just ask one of the store employees.
Don't be embarrassed about not understanding the wide world of wine (I only know a bit myself). There is usually at least one person in the store who can point you the right direction.

If you're looking to mix up your spritz there are plenty of things to try.
Add some herbs
The smell of a drink can have a really big affect on the way it tastes so dropping a sprig of fresh herbs into the finished cocktails can make a big difference.
Try it with Thyme, Rosemary or some fresh mint.
TRY DIFFERENT CITRUS
Instead of just garnishing with an orange slice try adding citrus juice right into the drink, or express the oils from a piece of the peel over the top. It doesn't have to be orange either.
Lime, lemon or grapefruit would all be delicious.

Ingredients
- 2 oz Aperol
- 3 oz Sparkling Wine
- 1 oz Soda Water
- Orange to Garnish
Instructions
- Add ice to a wine glass.
- Add in the liquid ingredients.
- Garnish with an orange if you'd like.
