Sweet Dream Cocktail

Learn how to make the Sweet Dream Cocktail.

This is one of those cocktails that I came up with on the spot by staring at my liquor shelf to see what sounded good at the time. It came out of a need to use up a big batch a raspberry syrup and a light whiskey and some raspberry sounded really nice together.

So the Sweet Dream cocktail came to be pretty simply, and has a very straightforward development.

Old Overholt is one of my favorite whiskies to mess around with at my home bar.

It has distinct light nutty flavors that are and quite different from a traditional big spicy American rye (although that has its’ place too), so it sounded really nice to mix with bright raspberry syrup.

To balance out the generous 3/4 oz pour of raspberry syrup I used, the drink needed some balance and a little lemon juice did the trick.

Then a hefty dash of angostura added a bit of depth and grounded the light flavors with a bit of warm spiciness, but it still needed a little something more.

That’s where the sherry comes in.

Amontillado Sherry has a really awesome oaky nuttiness to it that reminds me of hazelnuts and cooked lemons. It played beautifully off the nuttiness of the Old Overholt in the Sweet Dream and was the finishing ingredient I was looking for.

There are many different styles of sherry each with their own flavor profile and nuances, but for this cocktail to taste the way I have drawn it up with the recipe you will need Amontillado.

That’s not to say you can’t use anything else though.

I haven’t tried it with any other styles because I am happy with the way it tastes now, but maybe somebody will email me saying they used some other sherry and it will be even better that way.

Experimentation and freedom are what make home bars so awesome!

If you don’t have the right ingredients, try something else. If it doesn’t sound really good to you, tweak it. Maybe the results is worthy of nothing more than gulping down so you don’t have to waste your booze, or maybe it turns out to be incredible!

Sweet Dream Cocktail Recipe

Ingredients

  • 1 1/2 oz Old Overholt Rye
  • 3/4 oz Raspberry Syrup
  • 1/2 oz Lemon Juice
  • 1/4 oz Amontillado Sherry
  • 1 dash Angostura Bitters
  • 4 drops 20% Saline - (optional)

Instructions

  • Add all the ingredients to your shaker. 
  • Add ice and shake for about 12 seconds.
  • Double strain over a rocks glass with ice.
